Camp Food Hacks

The week before we go on a trip I try to get a little bit organized. The key word “try”. I pre-make a couple of meals so we just have to heat and eat if we have had a big day and can't be bothered cooking. Here’s a few camp food hacks that hopefully make some breakfasts, lunches or dinners easier.

🍕 Camp Pizza Roll

I make two of these and put these in the freezer as a quick meal for lunch or dinner. You can put anything you like on them as though you were making a normal pizza. I do pull them out of the freezer the night before though so they are almost thawed out completely or they take a long time to cook right through.

To prepare: Roll out you pizza dough into a rectangle shape, spread your sauce and add the toppings. Roll the pizza up to make a log and tuck the edges in. I double, even triple wrap in foil and freeze. Cook in the foil on a bbq or the coals, turning often. When cooked slice and enjoy.

🍳 Breakfast Quesadillas

These are super easy to make and tasty as! I make half a dozen and cut them into quarters. I wrap them in foil and freeze in individual servings. When we want them I take them out and sit them in the BBQ or camp oven and warm them up. Breakfast done !!

To prepare: Make a batch of scrambled eggs and cook up some diced bacon. Lay out your wraps and put some of the egg and bacon mixture in each. Sprinkle cheese, especially around the edges as this is your 'glue' as it melts. Add a second wrap to the top and toast each quesadilla. When cool cut into quarters and wrap in tin foil. Freeze

🍗 Deconstructed Chicken Kebabs

These are me being super slack and low on time but damn they are tasty. I cut up chicken breast, onions, a red capsicum and some pineapple and put it all in a zip-lock bag. No kebab sticks required lol. I add the stir-fry sauce and freeze. Saves the mess at camp when waters limited. We just defrost it the night before and pour it out of the bag into the frypan on the BBQ or campfire. Serve with baked potatoes. Delish and the kids love it too.

🥦Veggies On The Go

My kids love broccoli and cauliflower so I whip up a batch of broccoli and cauliflower with cheese sauce and freeze it in the foil trays before we go. Grill some chicken on the BBQ and some homemade potato chips and there's another meal the kids will eat.

🥔 Grated Potato Cakes

I call these grated potato cakes, we grew up eating them for lunches, dinners and snacks. They are a great accompaniment to a steak or schnitzel. I make and freeze them in batches of six, wrapped tightly in foil. Warm them up by throwing them on the BBQ or in a pan for few mins. My version is pretty plain but that's because its how my kids and other half like them. You can add onion, corn, peas, grated carrot etc.

To prepare: Peel potatoes and grate into a large bowl. Drain any water out of potatoes. (approx four cups worth makes a batch) add 3 eggs, 1/4 cup of flour, salt and pepper and mix. Heat oil in large pan and spoon batter into pan. Fry until golden brown on both sides. Drain on paper towel and when cool wrap in foil.

🥔 Creamy Potato Bake

This is always a winner in our family so I always make a tray to take away and then we only have to worry about some meat to go with it. I put it in the fridge to defrost the night before. Leaving it covered in foil I warm it up in the BBQ for about 25 mins.

To prepare: Peel and slice or cube potatoes. In a bowl I put some flour, the sliced/cubed potato and salt and pepper. Once the potato slices have been coated I layer it in the foil tray. Pour a cup of cream over and about half a cup of milk, then cook about 45mins. Sprinkle with cheese just before serving.

Happy camp cooking!
